Native to India, celosia now grows across tropical regions of Africa and South America, where the heat encourages the development of a wavy flower head resembling a rooster's comb, hence its common name cockscomb. Celosia has many uses. It is popular with florists for its beautiful flowers and vibrant colors, leaves and shoots that are edible, seeds rich in a soothing oil, and flowers that have astringent properties.
